Brown is a beautiful color. Or at least in can be. It can also be delicious.

Two of the most wonderful browns are chocolate and cinnamon. Not only do they make a beautiful contrast of color – one deep and dark, the other bold and vibrant – but the combination of sweet and spicy is divine.  To see what I mean, try this easy recipe:

Cinnamon Mocha Cake

1 ½ cups unbleached flour
1 cup golden or brown sugar
3 tbsp. fair trade cocoa
2 tsp. baking powder
1 tsp. ground cinnamon

½ cup light olive oil
¾ cup strong fair trade coffee
2 large free run or free range eggs
2 tsp. pure vanilla extract

Combine the dry ingredients in a large mixing bowl, and make a well in the center.  Add the remaining ingredients and mix by hand, stirring until the batter is smooth.

Pour the mixture into a greased and floured cake pan, and bake at 350 F for 35-40 minutes.  Use the toothpick test to check for doneness.  For cupcakes, bake for 15-20 minutes.

Allow the cake to cool completely before turning it out of the pan.  Top with frosting or pudding if desired.
